Recipes for a Healthy Cinco de Mayo Fiesta

Cinco de Mayo

You don’t have to be Mexican to celebrate all of the mouth-watering flavors and exciting festivities of Cinco De Mayo. If you’re looking to lighten up things while still enjoying your celebrations try some of my favorite easy-to-prepare recipes that are healthy, full of flavor, and guilt-free!

Southwestern egg tostada

Coconut Lime Fish Tacos with peach avocado salsa

Coconut Lime Fish TacosThe tang from the lime and the sweetness of the peaches make these some of the best tacos you will ever have! Add some crushed red peppers flakes or hot sauce if you like an extra kick.

churro donut holes

donutholesedited.jpgAt 50 calories a pop you have permission to have two (or twelve!). Rolling these puppies in cinnamon and sugar as soon as they get out of the oven creates that warm, melt-y, sugar-y coating on traditional churros without all of the fat and cholesterol that comes from frying.

cajun salmon tostadas with mango avocado salsa

Cajun Salmon Tostadas editedThe spicy salmon gives this dish just enough of a kick while the mango and avocado bring the perfect amount of sweetness and creaminess to balance the heat. Oh, and that sriracha-yogurt sauce, you’re gonna want to put that on everything.
