You don’t have to be Mexican to celebrate all of the mouth-watering flavors and exciting festivities of Cinco De Mayo. If you’re looking to lighten up things while still enjoying your celebrations try some of my favorite easy-to-prepare recipes that are healthy, full of flavor, and guilt-free!
At 50 calories a pop you have permission to have two (or twelve!). Rolling these puppies in cinnamon and sugar as soon as they get out of the oven creates that warm, melt-y, sugar-y coating on traditional churros without all of the fat and cholesterol that comes from frying.
The spicy salmon gives this dish just enough of a kick while the mango and avocado bring the perfect amount of sweetness and creaminess to balance the heat. Oh, and that sriracha-yogurt sauce, you’re gonna want to put that on everything.
Top with homemade guacamole instead of cheese if you’re dairy-free or Paleo and sub ground tofu instead of turkey if vegan eating is your thing.
