Plus the fudge sauce is so divine you might just find yourself putting it on everything. This dessert is meant to be a treat when you want a somewhat healthy splurge so enjoy it as is!
*For sugar-free option: omit maple syrup, sweeten with an all-natural no-calorie sweetener such as stevia, and increase milk to 3-4 tbsp.
CHOCOLATE MOUSSE WITH RED WINE HOT FUDGE
Servings: 4
INGREDIENTS
For Mousse:
- 12 oz Mori-Nu silken tofu
- 1/4 cup unsweetened cocoa powder
- 3-4 tbsp pure maple syrup (or agave/honey/other liquid sweetener)*
- 1 tsp pure vanilla extract
- 1 tbsp milk of choice

For Sauce:
- 1/2 cup red wine
- 1.5 tbsp semi-sweet chocolate chips
METHOD
- Place all of the mousse ingredients in a Ninja blender or Nutri Bullet and blend until smooth. Store in the fridge while you make the sauce.
- Put the wine in a small saucepan over medium-high heat. When it starts to boil, turn heat to medium and simmer for 3-4 minutes or until reduced by 1/2. Meanwhile, partially melt the chocolate chips in the microwave for 30 seconds. When the wine has reduced, turn the heat off and vigorously stir in the partially melted chocolate chips until they are fully melted into the sauce. Allow to sit for 5-10 minutes so sauce thickens slightly.
- To assemble, divide the mousse between 2 ramekins and drizzle with sauce. Garnish with fresh strawberries if desired.
